Melanzane alla Pizzaiola in Padella – Ricetta Veloce e Filante!

Hello everyone! Today we are preparing together the aubergines pizzaiola in a pan, a quick, stringy and delicious recipe! We will show you step by step how we make them, with simple and fresh ingredients. Perfect to enjoy on a slice of bread for an unforgettable summer lunch 😋 Ingredients: • 2 aubergines (about 900 g total) • 200 g well-drained mozzarella • 600 g tomato pulp • 60 g parmesan cheese • 4 tablespoons extra virgin olive oil • 1 clove garlic • 1 tablespoon capers • Oregano to taste • Fresh basil to taste • Salt to taste Procedure: 1. Cut the aubergines into slices about 1 cm thick. 2. Heat a grill well and grill the aubergine slices. 3. In a saucepan, heat 4 tablespoons of oil with a clove of garlic. 4. Add the capers and tomato puree. 5. Season with salt, oregano and chopped basil. Lower the heat, cover and cook the sauce for about 10 minutes. 6. Check the cooking of the aubergines with a fork: if it sinks, they are ready. 7. Cut the mozzarella into cubes. 8. In a large pan, begin assembling: a layer of sauce, one of aubergines, parmesan, mozzarella and basil. 9. Repeat the layers until all the ingredients are used up, finishing with sauce, mozzarella, basil and parmesan. 10. Put the lid on, cook on low heat until everything is well melted and stringy (about 15 minutes). 11.
