Kaali Dal & Chana Dal Vada Recipe (Crispy and Tasty) Ingredients 1 cup kaali dal (urad dal with skin), soaked for 6–8 hours 1 cup chana dal, soaked for 4–6 hours 2 green chilies 1-inch ginger 8–10 garlic cloves 1 medium onion, finely chopped 2 tbsp coriander leaves, chopped 8–10 curry leaves, chopped 1 tsp cumin seeds 1 tsp fennel seeds (optional) ½ tsp red chili powder ¼ tsp turmeric powder 1 tsp crushed black pepper Salt to taste Oil for deep frying Method Drain the soaked dals completely. Grind both dals together with green chilies, ginger, and garlic into a coarse paste. Do not add water (or add just 1–2 tbsp if absolutely needed). Transfer the mixture to a bowl. Add onion, coriander, curry leaves, cumin, fennel (if using), red chili powder, turmeric, black pepper, and salt. Mix well. Heat oil on medium flame. Grease your palms with a little oil, take a small portion of the mixture, and shape it into a flat vada. Fry until golden brown and crispy on both sides. Remove onto a paper towel to drain excess oil. Serving Suggestion Serve hot with green chutney, tamarind chutney, or tomato ketchup along with a cup of tea. Tips Drain the dals well to get crispy vadas. Keep the batter slightly coarse for the best texture.
