Please give it a try! ----------------------------------------------------------------------------------------- ■Ingredients (for 3 servings) ・Eggplant 3 (300g) ・Onion 1/2 ・Water 100ml ・Soy sauce 1 tbsp ・Vinegar 2 tbsp ・Sugar 1 tbsp ・Dashi powder 1/2 tsp ・Chili pepper 1 ・Potato starch 2 tbsp ・Salad oil 3 tablespoons ■Instructions 1. Slice the onion thinly and place in a bowl. 2. Remove the seeds from the chili pepper and slice it into rings. 3. In a small saucepan, add water, sugar, and dashi powder, bring to a boil, add soy sauce and vinegar, turn off the heat just before boiling, and pour over the onion. 4. Remove the stem from the eggplant, cut into bite-sized pieces, place in a plastic bag, and coat with potato starch. 5. Heat oil in a frying pan and start frying the eggplant skin-side down. 6. Once cooked, add to step ③, add the chili pepper, and mix. 7.
