Sweet potatoes baked with figs #cozycooking #vintage #comfortfood #food Recipe Ingredients: 5 large sweet potatoes 3 yellow onions 3 red onions 3 spring onions 300 g basmati rice 200 g dried figs 1 dl olive oil 1 bunch of parsley 4 tsp salt 0.5 tsp ground black pepper Preparation: Peel the sweet potatoes and wash them thoroughly. Do the same with the onions. Cut the sweet potatoes into rounds, the yellow and red onions into quarters, and slice the spring onions into long strips. Grease a baking sheet with half of the olive oil and place the chopped vegetables on it. Season with salt and pepper. Drizzle with the remaining olive oil and distribute it evenly. Wash the dried figs thoroughly, cut them into halves or quarters, and sprinkle them on top of the vegetables. Bake in an oven preheated to 180 °C for about half an hour. You can check if the sweet potato is fork-tender by pressing a fork into it. While the vegetables are baking, rinse the rice thoroughly in plenty of water, then cook it in three times the amount of salted water. Wash and chop the parsley, and sprinkle it on top of the rice when serving.
