Lomi Lomi Salmon (Salmon Salad) Ingredients: 500 grams fresh salmon fillet, skin removed 1/2 cup diced sweet onion 2 medium tomatoes, diced 1/2 cup chopped green onions 1 tablespoon coarse sea salt 1/4 cup of chopped red pepper 1/4 cup chopped fresh cilantro 2 tablespoons toasted sesame oil Juice of 2 limes dash of Salt & black pepper (optional) Instructions: 1. Wash the salmon and cut it into small cubes, about 1/4 inch in size. 2. Marinate salmon with sea salt for 1/2 an hour in the fridge 3. Wash salt off completely and drain excess water well 4. In a large mixing bowl, combine the diced sweet onion, diced tomatoes, chopped green onions, sea salt, and chopped red pepper 5. Add the cubed salmon to the mixing bowl and toss everything together until the salmon is evenly coated with the seasoning. 6. Add the chopped cilantro, toasted sesame oil, and lime juice to the mixing bowl and toss everything together again until well combined. 7. Cover the mixing bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to come together. 8. Serve the Lomi Lomi Salmon chilled as a salad or appetizer, garnished with additional cilantro and green onions if desired.
