Marinate - 30 min *Chicken*: 1/2 kg, small bone-in or boneless pieces *Chilli powder*: 1 tsp *Lemon juice*: 1 tbsp *Garam masala*: 1 tsp *Pepper powder*: 1 tsp *Salt*: 1 tsp Mix well. Rest 30 min. 2. Make the Gravy Base *Oil*: 2 tbsp *Onion*: 1 large, finely chopped *Ginger-garlic paste*: 1.5 tbsp Heat oil on med-high. Add onion → cook for 5-6 min till golden brown. Add ginger-garlic → 2 min till the raw smell is gone. Add marinated chicken. High heat 5-6 min till color changes 3. Masala *Garam masala*: 1 tsp *coriadander powder*: 2 tsp *Fennel powder*: 1/2 tsp *Cumin powder*: 1/2 tsp *Kashmiri chilli powder*: 1 tsp Add 1 cup tomato puree → cook 2 min till oil starts separating. Add 1/2 cup water → boil 5-6 min Add *1 tbsp kasuri methi + 1 tsp sugar + salt to taste*. Boil 1 min. Keep gravy semi-dry. 4. The Jalfrezi Toss - Most imp step In another hot pan + 1 tbsp oil: *Green chilli*: 2, slit *Onion*: 1, cut in squares/thick strips *Capsicum*: Green + red + yellow, cut in squares salt High flame stir-fry 2 min only. Keep them crunchy + charred. This gives “jhal phrezi” = spicy stir-fry flavor. Add these veggies to chicken. Toss 1 min on high heat. Done.
