BARRITAS de HIGO (COOKIES VEGANAS) | Living Like A Panda

The #fig bars that we show you how to make in today's video are a wonder of delight. The recipe is simple and the result is some jewels that we know, adding a hot drink to a delicious snack. You will see that with these simple steps you will want to do them every week. INGREDIENTS: Stuffed: 150 g of dehydrated figs 300 ml of water 1/2 tablespoon lemon juice Mass: 190 g of wheat flour 1 pinch of salt 1/2 teaspoon baking soda 65 g of vegetable margarine 100 g of panela 1 teaspoon lemon juice 1 Teaspoon vanilla extract We start by making the filling: · Dried figs are sometimes covered in rice flour. If this is your case, wash them well. · We are going to cut the stalk of the figs and once the hard part is removed, we are going to cut them into small pieces. · We put them in a saucepan together with the water and bring to a boil. · Once it boils, we are going to cook them for 30 minutes over medium heat, stirring from time to time so that they do not stick. you will see how it reduces the water and a kind of paste remains. · Remove from the heat, add the lemon juice and blend with an arm mixer to make a very rich fig paste. · We keep it for later. On the other hand we are going to make the dough: · Sift the flour, baking soda and salt into a bowl. · In another large and deep container, squeeze the vegetable margarine a little so that it loosens a little and is creamy. Instead you can use coconut oil but in a solid state, and do the same with the fork. Do not use either of the two melted because the dough will be very liquid. · To the margarine we add the panela and with a spoon we mix it for a few minutes, until it dissolves and there is a cream. · Add the lemon juice and the vanilla essence and mix well. · Now it's time to add, little by little, while we stir and mix, the sifted dry ingredients. Mix with a spoon and not with your hands so that you do not heat it to your body temperature and maintain the perfect consistency. · When you have a dough, make a ball with your hands and refrigerate it in the fridge for at least 30 minutes. · On greaseproof paper, spread half of the dough, forming a rectangle. Help yourself with a knife to cut the excess edges and add it at the ends. · In the center add the fig filling forming a thick line right in the center (watch the video) · To roll it, first fold one end of the dough over the filling and press a little with your hands. Then do the same with the other end. So that it does not overflow, turn it over and that the union is down. · Do the same with the other half of the dough. · Cut with a knife as many cookies as you like. We get about 5-6 cookies for each batch. In total about 12 fig bars. · Place them on parchment paper on a baking tray and bake at 180ºC for 10 minutes or until golden brown. · When you take them out of the oven, let them rest before eating them so that they do not split.
