No-Knead Bread Recipe: Crispy Outside, Hearty Inside I prepared this healthy whole wheat bread recipe according to the results of your poll. In the poll, “Crispy outside, hearty inside” received 57% of the votes, so I made this bread with that texture in mind. This bread is made with 100% whole wheat flour, requires no kneading, and has a crispy crust with a hearty, filling inside. Because whole wheat flour contains bran and has a higher fiber content, the dough may look soft at first, but it absorbs the water as it rests. Ingredients: 500 g / 17.64 oz / 4 cups + 1/6 cup whole wheat flour 420 ml / 14.2 fl oz / 1¾ cups water 4 g / about 1¼ teaspoons instant dry yeast 8 g / about 1⅓ teaspoons salt US cup measurement: 1 cup = 240 ml. In this recipe, I add the salt after the first rest. This helps the whole wheat flour absorb the water better and makes the dough easier to handle. You can let the dough rest in the refrigerator for 8–10 hours, or leave it on the counter for about 2–2.5 hours. Bake in a preheated oven at 230°C / 446°F with the lid closed for 20–22 minutes. Then remove the lid and bake for another 20 minutes at the same temperature.
