Today, a dessert from Transylvania: Bird's Milk or Snowballs a Transylvanian recipe (a delicious dessert) called Saxon Meschenmeolch Ingredients for 4 servings: 1 liter of milk (3.5–3.8%) 3 eggs 3 tablespoons of sugar 1 sachet of vanilla sugar or vanilla bean or vanilla extract 1 pinch of salt PREPARATION: Separate the eggs. Beat the egg whites with a pinch of salt with a hand mixer until stiff peaks form. Bring the milk to a boil on medium heat. Using a tablespoon, form the egg whites into oval balls and add them one at a time to the hot milk. Simmer these balls for one minute on each side over low heat. Remove them with a slotted spoon and let them drain in a colander. Remove the milk from the heat so it can cool slightly. !! Caution! If the milk is too hot, the egg yolk mixture will curdle too quickly. The bird's milk will still taste delicious, but it won't look good because of the flakes. Whisk the eggs, sugar, and vanilla flavor until smooth and combine with the slightly cooled milk. Then stir again on the stovetop until thickened. Remove from the heat and continue to cool while stirring. Pour the slightly cooled mixture into 4 small bowls or deep plates and carefully fold the egg whites into the cream.
