Ingredients: for 1kg of dough for the starter 100g Manitoba flour 100g warm milk 10g brewer's yeast (5g dry yeast) 1 teaspoon granulated sugar. for the dough starter 200g Manitoba flour (or 0 flour) 200g 0 flour 120g granulated sugar 50g room temperature water 2 whole eggs (medium) 3 egg yolks (medium egg yolks) 150g butter a pinch of salt (3g) 1 grated lemon zest 1 grated orange zest 2 sachets vanilla.
