One red bell pepper. One sprig of green onion. One sprig of leek. 3 bay leaves. 2 garlic cloves. 300 ml white wine. 3 tbsp mustard. 300 ml vegetable broth. Aluminum foil. Salt. Pepper. 1 kg butter. For the garnish 4 white potatoes. 2 tbsp garlic powder. 4 tbsp grated Parmesan cheese. Salt. Pepper. To taste olive oil. --For the sauces 4 tablespoons heavy cream 4 tablespoons chopped parsley 1 tablespoon chopped garlic 1 tablespoon ground chili 2 tablespoons chopped walnuts 1 teaspoon curry powder Salt 1/4 cup white vinegar 1/4 cup olive oil Process: Sear the pork loin in a hot pan with oil and then place it on a bed of onions, red bell pepper, spring onion, leek, bay leaf, and garlic on a baking sheet. Add the white wine. Recover the cooking liquid from the pan used to sear the meat. Mix with the vegetable broth and mustard and inject the meat with a food processor. Cover with aluminum foil and bake at 180 degrees. After 1 hour and a half, remove the foil and bake for another 15 minutes. For the garnish, cut the potatoes into wedges, add salt, garlic powder, olive oil, and Parmesan cheese. Place them on a baking sheet with one side facing the pan and bake for 35 minutes at 200 degrees. For the sauces: For roasted vegetables: Blend the vegetables left in the baking sheet where the meat was cooked with the cream in a blender. Season with salt and pepper to taste. For spicy chimichurri: Chop and mix garlic, parsley, and walnuts. Add ground chili, white vinegar, olive oil, curry powder, and salt.
