He led us through the traboules, narrow passageways whose secrets he seemed to know intimately. His first stop was Colette Sibilla, the charcutier at the Lyon market. He explained that a snack is a ritual in Lyon and described the display of charcuterie. Jacky Guieu is the owner of a restaurant in the market. Jean-Luc headed to the tiny kitchen to meet Simone, who had prepared osso buco. Then, he took the traboules to Henri Hugon and his wife, Arlette, in a small bistro. After a quick meal, he was off again, greeted by Jacotte Brasier, who offered him a hot sausage in brioche. Next, he takes us to Marcelle's, where we discover the dining room with its wide banquettes and the kitchen. Our final destination is Léon de Lyon, an establishment run by Jean-Paul Lacombe.
