[Ingredients: 16 servings] 380g | Strong flour 108g | Plain flour 64g | Soft flour 10g | Salt 7g | Dough improver 16g | Unsalted butter 10g | Sugar 7g | Instant dry yeast 94g | Milk 280g | Water ◆ Filling butter 160g | Unsalted butter ◆ How to make 1. Add all ingredients and mix at low speed for 2 minutes and at medium speed for about 8 minutes. 2. Cover with plastic wrap to prevent the surface from drying out and let it rise for 50 minutes. 3. Divide: 60g 4. Roll the dough into a ball and let it rise for 10 minutes. 5. Make it into a cone shape and let it rest for about 5 minutes. 6. After rolling it out with a rolling pin, place butter in the center and roll it up. 7. Pan it in a pan with the seam facing down. 8. Let it rise for 1 hour. (Be careful not to let the temperature exceed 30℃.) 9. Spray water on the top and sprinkle pearl salt. 10. Put it in a preheated oven at 250℃ and spray water. 11. Bake in an oven at 220℃ upper heat and 200℃ lower heat for 17-18 minutes.
