After spending a week on Kalymnos, I thought I had a pretty good handle on what this Greek island was all about. Then I spent a day driving to its most remote corners and realized I’d barely scratched the surface. This journey across the island took me from the busy capital of Pothia into a world that feels completely untouched by the typical tourism machine. I met a sponge diver wearing a helmet made of his own catch, ran into a man who’s been waiting a decade for the government to pay him for finding ancient shipwrecks, and eventually found my way to what might be the best meal I’ve ever had in Greece. Special shout-out to the local goats. 🐐 And at the restaurant in Emporios, I met the owner Pablo, a man who has lived in this tiny village his entire life — back when there were no roads, no lights, and he had to walk an hour each way just to get to school. Sitting on his veranda, eating slow-cooked goat that quite literally fell off the bone, it became clear that this is the real deal. It’s not Santorini, it’s not Athens, and it’s definitely not built for the crowds. It’s just Greece, as it’s always been. I ended the day hiking up to the ancient castle of Chora, looking out over the mountains toward Turkey as the sun set.
