Portuguese Chicken Soup
CHICKEN SOUP 1 onion chopped 2 tbsp garlic chopped 3 large carrots chopped 4 stalks celery chopped ½ cabbage chopped 2 bundles of kale chopped 4 large potatoes 3 cups rotisserie chicken shredded 4 cups chicken stock 8 cups water 1 tsp fresh thyme 1 tbsp chicken Knorr 3 tsp salt 2 tbsp olive oil 1 tbsp bacon fat ½ cup linguica chopped 1 lemon zest and juice 1 can drained and rinsed white beans 2 cups dry pasta ( your choice) In a large pot sauté onion and garlic in olive oil and bacon fat. Once translucent add carrots,celery and linguica. Season with salt as you go along. Add thyme, Knorr, chicken stock and water to a boil. Add kale, cabbage and potatoes covered with more water. Let simmer for about 20 minutes or until potatoes and kale are cooked. Add beans, lemon zest, lemon juice and pasta. Add salt to your taste. Cover and simmer low for another 10 minutes.
