Once a precious delicacy reserved for feasts, Sundae has come to be loved today as a representative food accessible to everyone. However, the process of making this familiar dish is a difficult task that requires meticulous attention to detail, even within the realm of food processing. The length of the small intestine from a single pig is 15 meters! Washing, trimming, and processing the small intestines of 400 pigs every day is truly akin to back-breaking labor. The gamey smell of the pig offal, amounting to 3 tons a day, torments the workers' sense of smell, and the somewhat gruesome appearance of the offal is also a source of distress. The hands of the workers washing small intestines all day long never seem to dry, becoming calloused and swollen. At a food factory located in Gyeonggi Province, the workers become busy without a moment to rest as soon as trucks loaded with pig offal arrive early in the morning. This is none other than a sundae factory that manufactures the nation's favorite snack, sundae. The amount of offal handled daily is a whopping 3 tons! This is equivalent to the volume of 400 pigs. The hands of the workers, sorting and dividing over a dozen types of offal—including small intestines, large intestines, liver, lungs, and pig heads—move like machines. In particular, the washing of small intestines for use in sundae is a continuous series of endless repetitions. Consequently, the hands of the workers, who spend the entire day in water, are so swollen that their fingerprints are invisible. That is not all. The task of boiling offal day and night is grueling labor that absolutely cannot be done without dedication. The sundae filling process, which requires quick hand movements and know-how, is also not easy. The suffocating heat of the boiling water used to cook sundae leaves the workers' shoulders stiff from the constant stirring to ensure it is cooked to perfection.
