【カンパーニュ】穀物の香りを楽しむライ麦とくるみのカンパーニュの作り方 How to bake Campagne #カンパーニュ #ハードパン #ライ麦パン

Please take a look 😄 https://room.rakuten.co.jp/room_4ecbf... 【Ingredients】For 1 loaf 255g semi-strong bread flour / French bread flour 45g rye flour 6g salt 197g water 1g instant dry yeast 100g walnuts 【Preparation】 While the dough is rising, break the walnuts into smaller pieces. 【How to Make】 Add the semi-strong bread flour, rye flour, and salt to a bowl, then mix lightly with a rubber spatula. Add the water and yeast, then mix as if dissolving the yeast. Once the yeast has dissolved, mix everything with a rubber spatula until no dry flour remains. Cover with plastic wrap and let it rest for 15 minutes. Fold the dough from the bottom of the bowl about 15 times. Please refer to the video for details. Repeat this process 3 times. After the third time, cover the dough with plastic wrap and let it rise until it doubles in size. Dust a proofing basket with semi-strong bread flour. Take the dough out onto your work surface, shape it into a rectangle, place the walnuts on top while folding the dough, and shape it into a round loaf. The key point is to seal the seam tightly! Please refer to the video for details. Gently place the dough into the proofing basket, lightly dust it with semi-strong bread flour, cover it with plastic wrap, and let it rise for the second time until it becomes 1.5 times larger. Turn the dough out onto a baking tray and score the top. Drizzle olive oil into the scored lines. Bake in an oven preheated to 300°C for 10 minutes, then lower the temperature to 230°C and bake for another 22 minutes.
