How to make Burhanpuri Dal | Royal, Tangy & Flavourful Traditional Dal | Chef Ajay Chopra Subscribe to my channel here:    / @chefajaychopra   Burhanpuri Dal is a traditional delicacy known for its rich flavours, balanced spices and comforting taste. This unique dal recipe combines simple ingredients with authentic cooking techniques to create a wholesome and satisfying meal. Portion Serving: 4-5 people Preparation Time: 5-10 minutes Cooking Time: 40 minutes For boiling dal: Tur dal soaked 1½ cups Green chilli, slit 2 pcs Salt 1 tsp Water as required Turmeric powder ½ tsp For coconut paste mixture: Dried coconut ¼ cup Poppy seeds 1 tbsp Water as required For spice masala mix: Black pepper 20-25 pcs Star anise 1 pc Cloves 4-5 pcs Black cardamom 1 pc Bay leaf 1 pc Cinnamon 1 inch Green cardamom 3 pcs Coriander seeds 1 tbsp Sahi jeera 1 tsp Saunf 1 tsp Oil 1 tbsp Jeera 1 tsp Bay leaf 1 pc Cinnamon ½ inch Onion sliced 1 pc Ginger & garlic paste 1 tbsp Tomato sliced 1 pc Turmeric powder ½ tsp Red chilli powder ½ tsp Spice masala mix 1 tbsp Splash of water Coconut paste mixture ½ cup Add boiled dal Water as required Tamarind paste 1 tbsp Ghee 1 tbsp Cloves 4-5 pcs Onion sliced 1 pc Red chilli powder ½ tsp Coriander chopped 1 tbsp Step 1: Pressure cook the dal Wash and soak toor dal. In a pressure cooker add turmeric, salt, slit green chillies and water. Pressure cook for about 3 whistles till soft and mushy. Keep aside. Step 2: Prepare coconut-poppy seed paste Toast dry coconut pieces till nicely browned. Dry roast poppy seeds till aromatic. Cool both, then grind with a little water into a smooth, rich paste. Step 3: Make spice masala mix Dry roast whole spices bay leaf, cinnamon, black pepper, star anise, black cardamom, green cardamom and coriander seeds first. Then add jeera and saunf, as they roast quickly. Cool and grind into a fragrant garam masala powder. Step 4: Prepare first tadka base Heat oil in a pan. Add bay leaf, cinnamon and cumin. Add sliced onions and cook till deep golden brown. Add ginger-garlic paste and sauté till aromatic. Step 5: Cook the masala Add sliced tomatoes and cook till soft. Add turmeric, red chilli powder and freshly ground spice masala mix. Add a little water to prevent the masala from burning, and cook until it simmers. Step 6: Add paste & dal Add prepared coconut-poppy seed paste and cook for a minute and mix well. Now add cooked dal along with water to adjust consistency. Add tamarind water and simmer till flavours blend beautifully. Step 7: Finish the dal Add fresh coriander and let the dal simmer for a few minutes to develop richness and depth. Step 8: Prepare second tadka Heat oil in a small pan. Add cloves and sliced onions. Cook till onions turn golden, then add red chilli powder at the end. Step 9: Final tempering & serve Pour the hot tadka over the dal.
