奶布甸即奶凍,雖非甚麼新奇有趣的甜品,做法及材料亦看似簡單,但其實當中大有學問,例如常常會出現沉澱或顏色不均勻的情況,今集Cannes就為大家排解奶布甸常見的疑難雜症,讓大家做出賣相完美,入口滑溜的成品。 奶布甸(奶凍)朱古力口味 附不沉澱、不分層小技巧│Panna Cotta /Milk Pudding /w Chocolate Flavor │Lou4Zou3 x Cannes手作食譜 奶布甸(朱古力味) 份量:540ml 材料: 北海道3.6牛奶350g 幼啡糖40g 可可粉5g 魚膠粉5.5g 忌廉(冷藏) 150g 伯爵茶味材料: 北海道3.6牛奶350g 幼啡糖40g 伯爵茶粉4g 魚膠粉5.5g 忌廉(冷藏) 150g 抹茶味材料: 北海道3.6牛奶350g 白砂糖40g 抹茶粉4g 魚膠粉5.5g 忌廉(冷藏) 150g 牛奶味材料: 北海道3.6牛奶350g 白砂糖40g 魚膠粉5.5g 忌廉(冷藏) 150g 做法: 1. 先把可可粉(其他茶粉或香味粉)和砂糖徹底拌勻,再加入魚膠粉拌勻。 2. 鍋內加入牛奶,再插入溫度計,用細火煮到70°C左右,牛奶表面可能會結出奶皮,挑走即可。 3. 然後把熱奶倒入步驟(1)內,攪拌均勻後,再把冷藏的忌廉倒入降溫並攪勻。 4. 接著把整盆奶液放進雪櫃,冷藏過程大約30至45分鐘(約1小時內),可以取出觀察奶液的凝固狀態。 5. 直至半凝固後,取出奶液稍為攪拌底部的沉澱物,便可進行分裝。 6. 分裝完成後,再放回雪櫃冷藏至完成凝固,奶布甸便可享用。 #cannes食譜 #hkfood #知味手作 #lou4zou3 #爐灶 #handmade #asmr #食譜 #奶凍 #奶布甸 #pannacotta #milkpudding *歡迎合作/聯絡(食譜/廚具/餐飲/活動/推廣):[email protected] 頻道訂閱↓ 記得Follow 並按小鈴鐺🔔 Youtube Channel:    / lou4zou3爐灶   Facebook:  / lou4zou3   Instagram:  / lou4zou3
