Hi Chickens :) Today I’m taking you through my top 5 tips for creating the most authentic tasting jerk chicken at home! Yes we know, you need a jerk pan and pimento wood but what do you do when you don’t have either of those? It’s not by force that your chicken suffers, honestly! 1. Indirect heat 2. Restaurant grade bbq coal 3. Wood chips & pimento berries 4. Brush with oil 5. Use a drip pan It’s also good to note that my bbq grill has vents not a chimney. If your bbq is like mine it’s important that you close the vents by the coal and open the vents on the side of the meat slightly in order to encourage the smoke to go towards the meat on it’s way out.
