Butter, divided Directions: Add beef to a frying pan over medium heat. Add the onion, taco seasoning and salt (to taste) and stir. When the beef is almost done, add the bell pepper. Cook for another 2 to 3 minutes or until the moisture is cooked out. Set aside. To assemble the quesadilla, place a layer of cheese on a tortilla leaving the edge empty. Add a layer of beef and then finish with another light layer of cheese. Place another tortilla on top. Preheat a large fry pan over medium heat. Add 2 tsp. Of butter to coat the bottom of the pan. Lay the quesadilla in the pan. Sprinkle a little bit of cheese on top of the quesadilla. Flip the quesadilla when the bottom tortilla turns a golden brown and the cheese inside melts. Continue cooking until the second side is also golden brown and the cheese inside is fully melted. Place the quesadilla on a cutting board to rest 1 minute before cutting. Enjoy this with the dipping sauce. Dipping Sauce Ingredients: ⅓ cup sour cream 1 Tbsp. hot sauce of your choice, or to taste Pinch of salt ½ - 1 tsp. Fresh lime juice Directions: Combine all dipping sauce ingredients in a bowl and stir to combine. Rockin Robin’s Taco Seasoning Ingredients: 2 Tbsp Chili powder 1 tsp. Garlic powder ½ tsp onion powder 1 tsp. Oregano leaves 1tsp. Smoked paprika 1 Tbsp. ground cumin 2 tsp salt ¼ tsp pepper Combine and store in glass bottle. Thanks for watching and sharing!
