Cider Yeast vs Saison Yeast – Which Makes the Best Cider?

I brewed a split-batch cider using two very different yeasts — a traditional cider yeast and a Saison beer yeast — and fermented them side by side under the exact same conditions. Same juice, same gravity, same pressure, same temperature… only the yeast was different. After previously brewing cider with American Ale yeast, and getting some unexpected results, I realized I’d never actually brewed cider with a proper cider yeast — or with Saison yeast either.
