Chiapas pozol. Pozol (from the Nahuatl word pozolli) is the name of both a fermented corn dough drink and a cacao blend that has its origins in pre-Columbian Mesoamerica. The beverage is consumed in southern Mexico, in the states of Chiapas and Tabasco. It is a thirst quencher that has also helped the people of this region as food on long journeys or during grueling days of farm work. There is a dispute as to whether pozol originates in Chiapas or Tabasco. It is a beverage that belongs to both. There is no conclusive evidence to assert that it originated in one place or the other, since corn and cacao are staple foods throughout the area, and the current political borders are artificial constructs that mean nothing to the people who inhabited these lands for centuries. The theory that it was created by the Maya-Chontal people of Tabasco is flimsy and is more of a myth repeated without foundation, obviously by the people of Tabasco. Interestingly, in Chiapas, today, the municipalities with the greatest Mayan indigenous presence are where pozol is least consumed. Its highest consumption is in the central zone and the historically Zoque regions. The Zoques are also present in Tabasco. And that would better explain why it is a common drink in both Mexican states. Unfortunately, the Zoque culture and people have not been studied as much as those of the Mayan peoples, and therefore, everything remains a hypothesis.
