Today, we’re combining two of our favourite childhood flavours in our vegan and gluten-free studio. We’re making crispy cookie sandwiches and we hope they will bring others joy as well. Nuts are considered a symbol of happiness and wisdom, which is why they are eaten during various holidays in many cultures. We try to eat all kinds of nuts as they all have different properties. It's worth remembering that nuts improve your memory and concentration. They also work as an antidepressant. For us, their flavour is just as important. We love it, just like cocoa or chocolate. Recipe: Time: about 1 hour Amount: about 30 cookie sandwiches Ingredients: 200 g corn flour 200 g potato flour 250 g powdered brown sugar 150 g ground walnuts and almonds 150 ml coconut milk 120 ml sunflower oil 2 tablespoons ground flaxseed 1 and 1/2 teaspoons baking soda 1 pinch salt Chocolate and nut cream Chocolate for melting Instructions: Grind the brown sugar into powder and then mix all the dough’s dry ingredients, including ground nuts, together. Add oil to this base and mix it well. Add coconut milk and mix it again. When the dough is ready, put it on a pastry board and roll it out evenly. Then, use a cookie cutter to give the cookies shapes. Put them on a baking tray. Put them into the oven heated up to 175ºC and bake for around 25 minutes. When the cookies are still in the oven, put the chocolate into a sauce pan and melt it. You’ll need it for spreading on top of the cookie sandwiches when they’re ready. When the cookies are ready, take them out of the oven and put them aside for a moment so that they cool. Once they’ve cooled, spread the chocolate cream on them, press them together and spread the chocolate on them. Enjoy it! It's good for you!
