A few days before Fat Thursday, we have for you a recipe for an outstandingly crisp and tender baked version of angel wings, inspired by one of our customers who requested just such a version of crisps a year ago. This recipe is based on our recipe, which has stolen the hearts of not only gluten-free vegans. Anyway, check it out for yourself! Time: 60 minutes Quantity: about 20 pieces Ingredients: 150 g of potato flour 150 g corn flour 100 g of chickpea flour 3 tablespoons of brown powdered sugar 1 and 1/2 tbsp ground flaxseed 1/2 teaspoon soda 1 pinch of salt 100 ml of oil 100 ml coconut milk 50 ml of water 1 teaspoon apple cider vinegar Powdered sugar to sprinkle on the angel wings Method of preparation: Subtract 50 g from the corn flour and set it aside for later. Mix or sift the rest of the dry cake ingredients through a sieve and pour in the oil, coconut milk and water. Knead the dough and set aside to let the ingredients combine and absorb moisture. After 20-30 minutes, add 50 g of corn flour, knead the dough again and add apple cider vinegar and, if necessary, a few more tablespoons of water to make the dough springy. We set them aside for another 10-15 minutes and prepare a silicone pastry board, a non-stick rolling pin and a saucepan with fritter for frying the angel wings. Preheat the oven to about 180°C and start rolling out the dough to a thickness of about 2-3 millimeters. Cut strips of dough about 4 cm wide and 15 cm long. The ends of the strips can be cut diagonally for decoration. In the middle of each strip lengthwise we make an incision of about 5 cm and weave one end through it, thus giving the proper shape to the angel wings. When the oven is preheated bake the angel wings arranged on a baking sheet for about 15 minutes. Before serving, sprinkle with powdered sugar. We use cane, which we grind ourselves.
