What are Swiss Enchiladas? Well, they are not from Switzerland! "Swiss" refers to the creamy sauce and melty cheese on top, which adds a twist to the traditional green enchilada sauce. Tender tortillas are filled with chicken, smothered in this luxurious sauce, baked until bubbly, and topped with a toasty cheese. For the sauce: 15 oz Tomatillos 2 Serranos 1 Onion 1-2 Garlic cloves A handful of cilantro 2 extra serrano peppers 1/4 - 1/2 cup Heavy cream Salt & Pepper 2 tbsp Oil 2 c Shredded Chicken 15 - 20 Warm tortillas 1 c Mozzarella (shredded) Serve with refried beans
