Try this tender, soft, and incredibly aromatic carrot cake that’s easy to make with simple everyday ingredients. It turns out moist, fluffy, and not “carroty” at all — instead, it has a pleasant citrus note. Both kids and adults love it. This recipe includes two versions: a light citrus one and a richer, spiced version with cinnamon, raisins, and walnuts. Choose your favorite — or try both 😊 My other recipe:    • Французський яблучний пиріг “Невидимка” – ...   🥕 Ingredients for the batter: • Carrots – 200 g / 7 oz / about 1½ cups finely grated • Eggs – 3 • Sugar – 150 g / 5.3 oz / ¾ cup • Vanilla sugar – 10 g / 0.35 oz / 2 tsp • Oil – 80 g / 2.8 oz / ⅓ cup • Flour – 180 g / 6.3 oz / 1½ cups • Salt – ¼ tsp • Baking powder – 10 g / 0.35 oz / 2 tsp • Orange zest Optional for a richer flavor: • Cinnamon – 1/3 tsp • Raisins – 60 g / 2 oz / ½ cup • Walnuts – 50 g / 1.8 oz / ½ cup chopped 🍰 Cream: • Mascarpone or cream cheese – 150 g / 5.3 oz • Heavy cream (at least 30% fat) – 200 g / 7 oz / ¾ cup • Powdered sugar – 1 tbsp A baking pan with a diameter of 22–24 cm / 8.7–9.4 inches.
