Recipe : Black Sesame Filling: 150g toasted black sesame seeds, 15g milk powder, 25g granulated sugar, 2 tablespoons coconut oil Dough: 500g bread flour, 15g granulated sugar, 1.5g dry yeast (low-sugar type), 6g salt, 287g cold water, 18g honey, 25g toasted black sesame seeds Others: 2L water, 40ml honey Steps: 1. Make the dough: In a stand mixer bowl, combine 500g bread flour, 15g sugar, 1.5g dry yeast, 6g salt, 287g cold water, and 18g honey. Mix on low speed until no dry flour remains, then knead on high speed until about 60% gluten development. Add 25g toasted black sesame seeds and continue kneading until the dough becomes smooth. Cover with plastic wrap and refrigerate for 30 minutes for fermentation. 2. Divide and shape: Divide the dough into 70g portions and round them into balls. Cover with a damp cloth and let them rest at room temperature for 3–5 minutes. 3. Roll and fill: Flatten each dough ball, flip it over, and roll it into a rectangle. Spread an appropriate amount of black sesame filling evenly, then roll up from top to bottom and pinch to seal. Cover with a damp cloth and let rest for another 3–5 minutes. Welcome!
