In Venezuela, this dessert or snack is usually served with coffee with milk or a piece of white cheese, and they have become so popular that they are also found in Venezuelan bakeries. These cookies are typical in the states of Miranda, Aragua, Barinas, Guarico, Bolívar, Delta Amacuro, Falcón, Lara, Sucre, Zulia, and Tachira. INGREDIENTS: 1/2 cup of water = 125 milliliters 1/4 kilo of chopped papelón (paper on the top) = 250 grams or Dark Muscavado Sugar 6 cloves (sweet cloves) 2 cups of flour = 280 grams 2 cups of flour = 280 grams to use when the dough needs flour to give it consistency and to add to the work surface. 1 egg 1 teaspoon ground cinnamon 1 teaspoon ground ginger 4 tablespoons salted butter = 100g 1 teaspoon baking soda PREPARATION: Prepare a molasses or caramel with brown sugar in advance, so that it's completely cool when ready to use. Place the water, brown sugar, and cloves in a large pot to prevent boiling. Bring to a boil and cook for 1 minute, just until the brown sugar is completely dissolved. Strain immediately to remove the cloves and set aside (reserve two tablespoons of this molasses or caramel to brush the catalinas before baking). Grease and flour a metal baking sheet or line it with parchment paper. In a bowl, add the flour, ginger, cinnamon, and baking soda and mix well. Make a hole in the center and add the egg, butter, and the cooled molasses or caramel. Mix everything well with your fingertips and begin to knead. Transfer the dough to the counter and add flour as needed until the dough no longer sticks to your hands or the table and the dough is soft. Preheat the oven to 150°C = 300°F. With a rolling pin, roll out the dough to a height of 1 centimeter. Using a round or flower-shaped cookie cutter, 8 to 10 centimeters in diameter, cut the catalinas and place them on the baking sheet. They should be separated by a distance of about 3 centimeters, as they spread when baked. Paint the catalinas with the reserved molasses and a brush before putting them in the oven; this gives them a more beautiful color. Place the tray in the oven and bake for 12 to 15 minutes at 150°C (300°F). Do not leave them in the oven too long, as they will dry out and harden. Remove the tray from the oven and immediately remove the catalinas from the tray, let cool, and enjoy.
