Making your own Japanese sweets can be very easy. Daifuku, the rice cake with azuki/anko bean paste, is one of the most well-known traditional and vegan sweets from Japan. What you'll need: For anko, sweet bean paste: Azuki beans: 200 g Sugar: 150 g (Salt: a pinch to a maximum of 1/2 tsp, optional) For mochi (rice cake) dough: Gluing rice flour: 100 g (not flour, not rice flour, but glutinous rice flour) Water: 130 ml Sugar: 2 tbsp Potato starch: for the work surface, about 2 tbsp If you want to make matcha daifuku, add about 1.5 tsp of matcha powder to 100 g of glutinous rice flour.
