What happens when an accountant, feeling lost in his career, decides to cook from home in the middle of a pandemic? That's Jorge Brancato. And five restaurants. In this episode, we were in Villa María, Córdoba, to sit down with Jorge at Amore Trattoria, one of his five ventures, and we had a conversation that ranged from cooking in his apartment during 2020 to a 40-person team, sourdough, New York-style pizzas, and an upcoming national pasta competition. Jorge's path to gastronomy wasn't straightforward. He studied accounting (and dropped out), owned a video rental store (during the Netflix era), a clothing store, another in Carlos Paz that almost went bankrupt... and only then, with the pandemic as a push, did he dare to do what he had always loved: cook. We talked about how to start a delivery business from scratch with no prior knowledge, the frustrating but ultimately educational mistakes, how to maintain quality across multiple locations, team leadership, and that spark that makes you say, "This is the last project... well, the next one too."
