Let's make easy and nutritious dak gaejang using boneless chicken breast! =================================== [ Dak gaejang ] about 3 servings [ Ingredients ] about 11 cups (2L) water 1 pack (about 300g) chicken breast 3 stalks (300g) green onion 2 cups (80g) oyster mushroom about 1/4 (70g) onion 1 cup (70g) mung bean sprouts about 2/3 cup (25g) chives 1/5 cup (40g) soup soy sauce about 1/3 cup (26g) coarse red chili pepper powder 1 tbsp (20g) minced garlic 2 tbsp (14g) sesame oil 1 tbsp (7g) cooking oil 2/3 tbsp (8g) fine salt 1 egg a pinch of ground pepper a pinch of minced garlic [ Directions ] 1. Rinse the chicken breast in water. 2. In a pot, add water and the chicken breast and bring to a boil. When it comes to a boil, reduce the heat and continue cooking for about 10 minutes. 3. When the chicken breast is cooked, scoop it out and separate the meat and the broth. 4. Slice the green onion in half lengthwise, and chop into pieces 5-6cm long. 5. Chop the chives into pieces 5cm long. 6. Finely shred the oyster mushroom, and julienne the onion into pieces 0.4cm thick. 7. When the chicken breast has cooled down, shred it along the grain. *If you are using a knife, be careful as the meat may break apart. 8. In a pot, add the sesame oil, cooking oil, and green onion and stir-fry until the green onion wilts down. 9. Reduce to low heat and stir-fry some red chili pepper powder to make chili oil. 10. Pour the broth into the pot. Add the oyster mushroom, onion, chicken breast, minced ginger, minced garlic, soup soy sauce, and fine salt, and boil over high heat. *Too much minced ginger can change the taste of the dish, so use sparingly. *Season with fine salt to your taste. *You can opt to add some artificial seasoning or beef dashida. 11. When the broth comes to a full boil, reduce to medium heat and continue cooking for about 15-20 minutes. 12. Whisk in an egg into the boiling dak gaejang. Then, add chives and mung bean sprouts and continue cooking for about a minute. 13. Plate the dak gaejang and sprinkle some ground pepper before serving.
