Take Paik Jong Won’s know-how and large-scale recipe as a base, and add your own effort and research to create your own special flavor of stir-fried pork! =================================== Stir-fried Pork Recipe (100 servings * Approximately 210g per serving) [Ingredients] Vegetable mix Onion 2kg Cabbage 2kg Zucchini 1kg Cheongyang pepper 100g Red pepper 100g Mild pepper 200g Carrot 500g Green onion 500g Stir-fried Pork Pork (front leg) 10kg Pepper paste 1kg Brown sugar 500g Starch syrup 300g Minced garlic 500g Dark soy sauce 500ml Coarse chili powder 900g Fine chili powder 250g MSG 30g Pepper 20g Water 2.5L Cooking Sesame oil 15ml Cooking oil 30ml Sesame seed 15g [Directions] Step 1: Create stir-fried pork meat base Prepare pork by slicing front leg meat into thickness of 0.5-0.7cm. Put a large pot on stove and pour in 2.5L of water. Add brown sugar, starch syrup in water and stir to dissolve as it boils. Once the mixture boils, add pork and use paddles to make sure seasoning covers pork evenly. Let pork cook as juices come out. Once pork is slightly cooked, add minced garlic and mix. If more water is needed, add little by little until the pork sits in water. While pork cooks, add 500mL of soy sauce, and add pepper paste and pepper powder and mix with pork. Using fine pepper powder helps give stir-fried pork a tasty red color. Sprinkle pepper for a spicy flavor, and add MSG if needed. Step 2: Make mixed vegetables Chop vegetables into similar sizes and mix. Step 3: Prepare to serve stir-fried pork When an order comes in, put pan on heat and add cooking oil and enough vegetable mix. (120g per 2 servings) Add vegetables and shake pan to quickly stir-fry on high heat. Cook just enough to coat vegetables in oil and slightly wilt vegetables. Add pork (300g per 2 servings) to cooked vegetables, and quickly stir-fry just enough for vegetables and pork to mix. As pork is already cooked, just cook enough to heat up the meat. Once vegetables and pork are mixed, add 1 tbsp of sesame oil to add a flavor.
