#201 - Alan Geaam - La gastronomie pour se réconcilier avec ses racines

Alan Geaam has a story that very few great chefs share. Born in Lebanon during the civil war, Alan grew up in a family where cooking was a way to bring people together, to soothe fear. From a very young age, he developed a palate guided by textures, the aromas of spices, the taste of the bottom of the pan, and the generosity instilled in him by his mother. Without a degree, without a network, without even speaking French, Alan arrived in Paris in the late 1990s. Initially, he worked on construction sites by day and in kitchens by night, learning the language through music, books, and cartoons. Nineteen years later, he became the very first Lebanese chef to earn a Michelin star. Even more incredible, he earned this first star in his own restaurant without ever having worked at a Michelin-starred establishment before.
