First, cut some celery into pieces and place them in a bag with water and ice. Then, peel it thoroughly, cut it into your preferred pieces, and leave it in the water. Squeeze lemon juice, ideally a mild juice. Crush some cilantro stalks, garlic, and ginger, and add the lemon juice…this is what we call "mosto." We take the celery in a cold bowl, season it, and add the magic lemon we made with the secret to balance… Celery water!
