Today, I'll teach you how to make a very easy and delicious sweet and sour tamarind chutney. This is the same chutney we eat with samosas, kachoris, dahi bhallas, chaat, papdi chaat, and panipuri. Once you try this recipe, you'll want to make it again and again. 📝 Ingredients Tamarind – 1 cup (seeded or unseeded) Jaggery – ¾ cup (more or less depending on your taste) Sugar – 2-3 tablespoons (optional) Salt – to taste Black salt – ½ teaspoon Red chili powder – ½ teaspoon Roasted cumin powder – 1 teaspoon Fennel powder – ½ teaspoon (optional, but tastes great) Water – 2 to 3 cups (as needed) 👩‍🍳 Method of Preparation – Step by Step with Love 1️⃣ Soaking the Tamarind First, we'll wash the tamarind thoroughly. Now, put it in a pot and add 2 cups of lukewarm water. Soak it for at least 30-40 minutes. If you want to make it faster, you can also boil it lightly for 10 minutes. When the tamarind has softened, mash it with your hands to extract all the pulp. Now, strain it through a sieve to remove the fibers and seeds. We want a smooth, thick pulp. 2️⃣ Cooking the Chutney Now place a pan on the stove and pour the strained tamarind water into it. Now add the jaggery. Set the stove to medium heat and let the jaggery dissolve completely. Once the jaggery has dissolved, add: Salt Black salt Red chili powder Roasted cumin powder Fennel powder Add everything and mix well. Let it cook for 8-10 minutes. Stir occasionally to prevent sticking to the bottom. 3️⃣ Checking the Thickness As the chutney cooks, it will begin to thicken slightly. Keep in mind: The chutney thickens further after cooling, so don't overcook it. If it seems too thick, add a little hot water to adjust the consistency. 4️⃣ Final Taste Check Now take a spoon and taste it 😊 If it seems too sour, add a little more jaggery. If it seems too sweet, add a little tamarind water or a pinch of salt. Simply turn off the heat and let it cool completely. 🍽️ Serving Ideas You can eat this chutney with: Samosa Kachori Dahi Bhalla Papdi Chaat Aloo Tikki Panipuri If kept in the refrigerator, it will last for 10-15 days. 🌟 Some Special Tips (Indian Kitchen Secrets) If the chutney needs to last longer, add a little vinegar (1 teaspoon). If you want more shine and a market-like color, boil and grind 1-2 dates and add them.
