Pour 100 ml of olive oil into a saucepan. Add 6 crushed garlic cloves, a tablespoon of black peppercorns, a couple of bay leaves (tear them to infuse the oil with their aroma), and a tablespoon of sweet paprika (you can use smoked or unsmoked). Let it cook for 30 seconds, then pour in 100 ml of white wine and reduce for 5 minutes over high heat. Add a tablespoon of oregano, 100 ml of apple cider vinegar, and reduce for another 5 minutes. Pour in 300 ml of extra virgin olive oil. Stir, remove from the heat, and let it cool while you prepare the sardines. To clean the sardines, cut off the heads with scissors, remove the bones along the sides, and open the sardines with your fingers. Separate the fillets and wash the skin to remove the scales. Salt the sardines on both sides and coat them in a mixture of 50 g of wheat flour and 50 g of chickpea flour. Fry in plenty of hot olive oil and drain on paper towels. Place the fillets in a container and add one or two ladles of marinade between each layer. Once all the fillets are in the container, pour over the remaining marinade. Cover and refrigerate for at least 8 hours.
