Tropical Pineapple Bake & Blue Mountain Floats! Tropical Pineapple Bake Ingredients: 1 20oz can pineapple chunks, not drained 3/4 cup sugar 2 eggs, beaten 1/4 cup cream of coconut 2 Tablespoons cornstarch 2 tsp vanilla 2 Tablespoons butter, sliced 1 tsp cinnamon Topping: 1/2 cup toasted coconut flakes 4-6 maraschino cherries Directions: Preheat oven to 350°. Butter a 9X9 pan and set aside. In a large bowl mix the pineapple chunks, sugar, eggs, cream of coconut, corn starch, and vanilla. Pour into buttered pan. Top with sliced butter and cinnamon. Bake for 45 minutes. Meanwhile toast the coconut flakes. When it's done top with the toasted coconut flakes and cherries. Serve with vanilla ice cream or whipped cream!
