YOU NEED: 500 - 600 g pork, cut into bite sized cubes (I used pork shoulder) 3 - 4 Maltese sausages, cut into pieces (or any cured pork sausage with 2 tsps. of ground coriander to the stew) 1 large carrot, medium diced 2 ribs celery, medium sliced 1 large onion, roughly chopped 4 tomatoes, roughly chopped 8 new potatoes, quartered with skins left on (or 2 large potatoes, medium cubed with skins left on) 1 can Marrowfat Peas, drained, or 2 cups of frozen or fresh peas 5 - 6 cloves of garlic, roughly minced 1 heaping Tbsp. tomato paste 2 - 3 bay leaves 1 Tsp. dried thyme (or 2 fresh sprigs) 2 Tsps. fennel seeds 1/2 glass red wine water to cover, or as needed/desired salt and pepper to taste olive oil to sauté
