Simple, flavourful, and authentic. Ingredients - For Boiling & Extracting Tomato Juice: 250 g ripe tomatoes 40–50 g green chilies ½ tsp salt 2 tsp coriander seeds 1 tsp black pepper (optional) For Tamarind Extract: 12–15 g tamarind 750 ml water (approx.) For Tempering: 3 tsp oil 10–12 garlic cloves (finely chopped) A handful of curry leaves 1 tsp cumin seeds A pinch of asafoetida (hing) 4 dried red chilies Chopped coriander leaves (for tempering and garnish) For Final Seasoning: ½ tsp turmeric powder 1½ tsp salt (adjust to taste) 1 to 1½ tsp red chili powder (as preferred) Instructions: 1. Prepare Tomato Base: In a pot, combine tomatoes, green chilies, salt, coriander seeds, and black pepper (if using). Add just enough water to cover. Cook on medium flame for 10–12 minutes until tomatoes soften. Alternatively, pressure cook for 2 whistles. Once done, allow to cool slightly and mash thoroughly. Strain the mixture to extract juice. Discard skins and seeds. 2. Add Tamarind Extract: Soak tamarind in warm water and extract the pulp. Mix tamarind extract into the strained tomato mixture. Add more water if needed, adjusting the consistency (roughly ¾ litre in total). Bring the rasam to a gentle boil. 3. Prepare Tempering: In a small pan, heat oil. Add chopped garlic, curry leaves, cumin seeds, asafoetida, and dried red chilies. Optionally, add some coriander leaves to the tempering for enhanced flavour. Sauté until garlic is golden brown and spices release aroma. 4. Final Seasoning and Simmering: Pour the tempering into the boiling rasam. Add turmeric, red chili powder, and additional salt as needed. Simmer for 3–4 minutes to blend all flavours. 5. Garnish and Serve: Add freshly chopped coriander leaves before serving. Serve hot with steamed rice or enjoy as a soup. TIP: No need for rasam powder—this traditional method brings out rich, tangy flavors using fresh ingredients.
