Quickly wash the bean sprouts. Mix A together. ② Place half of the vegetables from ① into aluminum foil, top with 1 slice of salmon, spread with half of A, then top with half of butter and wrap. Make another batch in the same way. 3. Place the ingredients in a frying pan and pour in about 1cm of water (not listed). Cover and steam for about 12 minutes. If using an oven, bake at 190°C for 10 minutes. This time, I cooked it at the same time as the hamburger steak, so I removed it first. ◎Fermented Pork Kimchi Ingredients: 150g pork belly 120g kimchi 1/2 onion A. Soy sauce koji: 1 tablespoon (adjust depending on the kimchi's salt content) A. Sake: 1 tablespoon A. Mirin: 1 tablespoon A. Miso: 1/2 tablespoon 1. Chop the onion into wedges. Cut the pork into bite-sized pieces. 2. Heat sesame oil in a frying pan, add the kimchi and pork, and stir-fry until browned. Add the onion and stir-fry until softened. 3. Add the ingredients (A) and stir-fry for about 3 minutes, then add the miso paste. ◎Chicken and Cabbage Braised with Yuzu Pepper Ingredients: 300g chicken thighs 1/4 cabbage 1 tablespoon garlic koji A. 1 tablespoon sake A. 1/2-1 teaspoon yuzu pepper (If you don't like spicy food, reduce to 1/2 teaspoon) A. 1/2 tablespoon soy sauce A. 100ml water 1. Cut the chicken thighs into bite-sized pieces and coat with the garlic koji. Roughly shred the cabbage. 2. Place the cabbage in a large frying pan, add the chicken thighs and ingredients (A) on top, cover, and heat over medium heat. Bring to a boil, then reduce heat to low-medium and simmer for 13 minutes. Fermented Hamburger Steak Ingredients (Serves 2) 250g Ground Beef 1/2 Onion 1 Tablespoon Onion Koji 1 Slice Processed Cheese A 1 Tablespoon Sweet Koji 1 Tablespoon Ketchup 1 Tablespoon Worcestershire Sauce 1 Tablespoon Soy Sauce Directions 1. Finely chop the onion. Put the ground beef, onion, and onion koji in a bowl and mix until sticky (Photo a). 2. Divide 1 into 2-3 equal parts and beat them together like playing catch with both hands to remove any air bubbles. Fill with cheese and shape into oval shapes (Photo b). ③ Place a baking sheet on a baking tray, place the shaped hamburger steak on top, and pour the mixture over it. ④ Bake in the oven at 190°C for 20 minutes. ◎Salted Koji and Ginger Pork Ingredients: For the ginger pork: 180g Onion: 1 small A. Salted Koji: 1 1/2 tablespoons A. Mirin: 1 tablespoon A. Sake: 1 tablespoon A. Ginger: 1 piece 1. Cut the onion into wedges. 2. Place the pork in a frying pan, then add the ingredients from Step 1 and A on top, cover, and cook over medium heat. ◎Salted Garlic Soup Carrot: 1/3 Shimeji Mushrooms: 1/2 pack (approx. 50g) Chicken Thigh: 1/2 piece (approx. 150g) This time, I also added bean sprouts and chives! Heat sesame oil in a pot and sauté the chicken, carrots, shimeji mushrooms, and komatsuna in that order. 3. Add A to the ingredients, bring to a boil, and simmer for 6 minutes. Place the warmed rice in a bowl and pour over 3.
