Ingredients 1 ripe durian 3 cups glutinous rice 3 cups butterfly pea water 3 cans coconut milk 2 cups sugar 1 tablespoon salt Method 1. Place the glutinous rice and butterfly pea water in a microwave-safe dish. Microwave for 15 minutes, stir or flip the rice, then continue cooking for another 3 minutes, or until the rice is fully cooked. 2. Meanwhile, combine the coconut milk, sugar, and salt in a saucepan. Bring to a gentle simmer, stirring until the sugar dissolves and small bubbles appear. Remove from the heat. 3. Pour half of the coconut mixture over the hot sticky rice. Mix well, cover, and let it rest for 5 minutes so the rice absorbs the coconut milk. 4. Return the remaining coconut mixture to the saucepan. Add the mashed ripe durian and cook over medium heat until it begins to bubble gently. Remove from the heat. 5. Serve the sticky rice warm or at room temperature.
