Ingredients 3 kg peeled lychees 5 liters water 1,100 g granulated sugar 1 teaspoon salt 5 pandan leaves Instructions 1. Wash the lychees with clean water. 2. Peel the lychees. 3. Use a short spoon to loosen the stem end of the lychee and remove the seed. Dip the spoon in water if the lychee is stained. 4. Boil the water with the pandan leaves until it boils, then add the lychee flesh. Use a ladle to skim off the foam until the water is clear and boiling. Then add the sugar and salt. Let the water boil, then turn off the heat. Tip for easy lychee peeling using only a spoon: Use the tip of the spoon to press around the stem end of the seed in a circular motion to break the peel apart. Then repeat the process, trying to get as much of the spoon tip as possible onto the seed. Then gently lift the seed out.
