How to sharpen a dull knife and get a razor “popping” sharp edge. Franco demonstrates this step by step on how he sharpens our knives by running a belt grinder in reverse. This is very important because if your blade heats up it changes your edge’s heat treatment and destroys the cutting edge. It is also important to run the belt grinder at lower speed to give you more control and prevent heat build up. We use 3 belts in our sharpening process. The belt sizes that Franco use is 1” wide and 78-3/4” long. The first belt is a #80 grit belt and the second belt is a #220 grit belt. The last belt is a custom made leather belt. It is a piece of bovine leather glued to an old belt, which prevents the leather from stretching out. We apply a polish compound on the belt so we can hone the knife to have a razor sharp edge.
