This time, I finally baked chocolate muffins—something that had been missing from my channel. I baked them several times to get that perfectly domed shape, and while they were cooling, I also made a bowl of chilled tomato noodles with plenty of ice. I only meant to bake a few muffins, but somehow it turned into a full meal. Still, I ate well, so life is good. I’ve written the exact measurements and instructions below. :) [Chocolate Muffins – Makes 3] 37g egg 22g milk 27g neutral cooking oil 22g unsalted butter, melted 59g unsweetened Greek yogurt 80g sugar 1g salt 2g vanilla extract 110g all-purpose flour 20g unsweetened cocoa powder 6g baking powder A pinch of baking soda 40g dark chocolate chips or chunks Tips! 1. The ingredients are listed in the same order they were added in the video. 2. Use room-temperature eggs and milk. 3. Make sure to use unsweetened Greek yogurt and unsweetened cocoa powder. 4. Do not use strongly flavored oils such as olive oil or avocado oil. Neutral oils such as grapeseed, canola, or sunflower oil work best. 5. I used dark chocolate chunks so there would be rich pieces of real chocolate throughout the muffins. Regular chocolate chips can also be used. 6. Fully preheat the oven to 200°C / 392°F. 7. Once the dry ingredients have been added, do not overmix the batter. 8. I used tall muffin molds that were 4.5cm / 1.8 inches high. 9. Do not open the oven door while the muffins are baking. 10. [Chilled Tomato Noodles – 1 Serving] 2 tomatoes 1 tbsp soy sauce 1 tbsp lemon juice 1 tbsp allulose or oligosaccharide syrup 1 tsp sugar 1 tsp minced garlic Salt, to taste 3 tbsp kimchi juice Perilla leaves 1 Cheongyang chili pepper Sesame seeds Cherry tomatoes, for garnish Thin wheat noodles Ice cubes [Kataifi-Wrapped Fried Shrimp] Shrimp Salt and pepper Kataifi pastry The kataifi pastry may unravel if the wrapped shrimp are placed directly into the oil. Place each shrimp on a wire skimmer, then carefully ladle hot oil over it several times to set the outside. Once the kataifi is firmly attached, lower the shrimp into the oil and fry until crisp.
