A new patisserie has opened in Kobe. Patisserie LABO feat. LK is run by three pastry chefs who share a deep love for making sweets. The name “LABO” comes from “laboratory” — a reflection of their approach to pastry: understanding the ingredients, studying the techniques, and thinking carefully about the purpose of every step. In this video, we follow the team before opening as they prepare pastry cream, sponge cake, pudding, mousse cakes, Mont Blanc, tarts, and more. They work with carefully selected ingredients, including “Takasago no Yuhi,” premium eggs from Hyogo known for their vivid orange yolks, fragrant Yotsuba cultured butter, and finely milled pastry flour made from 100% Hyogo-grown wheat. LABO’s mousse cakes are built with six or more layers of flavor and texture. Acidity, aroma, softness, and contrasting textures unfold little by little with every bite. From the elegant finish to the balance of flavors inside, each cake is made with remarkable care.
