MERINGUE Recipe: 200 g egg whites 240 g sugar 160 g powder sugar Preparation: Put baking paper on your baking plate and draw circles of 4-5 cm diameter. Afterwards, flip the paper. Whisk the egg whites for a couple of minutes, until you obtain a decent volume as seen on the video. Add 1/3 of the sugar and whisk a few minutes. Repeat this step twice. Sieve the powder sugar (can be done beforehand too) Add the powder sugar to the meringue and whisk carefully untill the meringue doesnt flow together anymore. Pipe the meringue on your baking plate, within the drawn circles. Bake at 120 °C for 1-1,5 hours. The meringues are ready once they can easily be removed from the baking plate 2. ASSEMBLING THE MERVEILLEUX Make whipped cream using 1250 ml of cream and 200 g of sugar. The whipped cream needs to be rather firm. Take two meringues and put some whipped cream in between. Cover the sides with whipped cream Cover the sides with chocolate flakes Put some more whipped cream on top of it. Decorate it as you desire (fruits, more chocolate, ...)
