It is known for its fluffy, soft, and spongy texture, and is often served with chickpea curry or spiced peas, smeared with butter or ghee. Paneer Ghotala is a spicy, tangy, and creamy Indian dish, a popular street food in Surat, consisting of grated paneer, onions, bell peppers, and tomatoes cooked with spices and butter, often topped with cheese, and served with pav, roti, or paratha. This is a quick dish that's similar to the spicy flavor of pav bhaji, but with paneer and cheese. Facebook link @gharkirasoi Instagram link @gharkirasoi Ingredients for Paneer Ghotala Paneer Ghotala: 200 grams (half grated and half crushed) Butter: 2-3 tablespoons Oil: 2 large finely chopped onions: 2 large finely chopped tomatoes: 2 teaspoons Ginger-garlic paste: 1 teaspoon Green chilies: 2 (finely chopped) Coriander leaves: finely chopped Spices: Turmeric (1/4 teaspoon), Kashmiri red chili (1 teaspoon), coriander powder (1/2 teaspoon), garam masala (1/2 teaspoon), pav bhaji masala (1 teaspoon), and salt to taste How to Make Paneer Ghotala Prepare the masala: Heat oil and a little butter in a pan. Add green chilies, ginger-garlic paste and fry for a few seconds. Fry onion-tomato: Now add finely chopped onions and cook till they turn light pink. After this, add chopped tomatoes and capsicum and cook for a while and the butter starts separating. Now add spices: Now reduce the flame and add turmeric, red chili, coriander powder, pav bhaji masala, garam masala and salt and mix well. Add paneer: Add both grated and chopped paneer. If you want, you can add a little (half a cup) water for a light gravy. Cook: Cook on low flame for 2-3 minutes so that the spices mix well with the paneer. Tadka and serve: Finally, add lots of butter and green coriander on top. It is eaten with hot, buttered bread. Method of Preparation (Kulcha) Ingredients and Preparation: Kulcha dough is prepared by mixing 400 grams of flour, 1/2 cup of yogurt, 1 teaspoon of baking powder, 1 teaspoon of baking soda or yeast, salt, and water. The dough is left to rest for a while so that it can ferment. Method of Cooking: When half a cup of water boils in a pan, add the prepared kulchas.
