Gâteau au fromage blanc et citron

Today I'm offering you a butter-free pastry: a lemon and cottage cheese cake. With this recipe, I invite you to prepare for the warmer weather with a fairly light but still very delicious recipe! Lemon and cottage cheese cake is truly the recipe to discover. Delicately flavored with lemon, it's extremely light and will be a hit with your guests. Of course, you can customize the recipe by replacing the lemon zest with orange or simply vanilla. Cottage cheese replaces butter and reduces the calories in this cake while leaving it moist and, above all, not dry at all. I recommend using a full-fat cottage cheese (Calin or Jockey will do the trick) and using an untreated, preferably organic, lemon. If you prefer a stronger lemon flavor, you can add 1 to 2 tablespoons of lemon juice. I use cornstarch, but you can also make this cake with flour, but it will be less fluffy. A great alternative is to make a 50/50 flour and cornstarch combination! Also, for those who are really careful, you can reduce the sugar a little.
