The bread bowl uses cottage cheese, almond flour, and mozzarella to create a crusty, golden, soup-worthy bowl that has no business being this good. The broccoli cheddar soup is thick, creamy, and uses cream cheese instead of flour to thicken — so it's naturally low carb and impossible to mess up. ━━━━━━━━━━━━━━━━━━━━━━━━━ 🍞 COTTAGE CHEESE BREAD BOWL (Makes 2 Bowls) ━━━━━━━━━━━━━━━━━━━━━━━━━ 1 cup full-fat cottage cheese (small curd — Daisy or Good Culture) 2 large eggs (room temp) 1¼ cups superfine almond flour (Kirkland or Bob's Red Mill) 2 tsp baking powder (aluminum-free) 1 cup shredded mozzarella ½ tsp garlic powder ½ tsp onion powder ½ tsp Italian seasoning ¼ tsp salt 1 tbsp melted butter (for brushing) Everything bagel seasoning (for topping) INSTRUCTIONS: 1. Preheat oven to 375°F 2. Spray the INSIDE of two oven-safe bowls with cooking spray 3. Blend cottage cheese and eggs until smooth — no lumps 4. Melt mozzarella in microwave (60 sec, stir, 30 sec more) 5. Combine blended mixture into melted mozz, add almond flour, baking powder, and all seasonings — mix until thick dough forms 6. Divide dough in half, press each half INTO a greased bowl — push it up the sides like a pie crust 7. Brush tops with melted butter, sprinkle everything bagel seasoning 8. Bake 25-30 min at 375°F until deep golden brown 9. Cool 10 minutes in the bowls, then flip out onto a plate 10. Put bread bowls back in oven right-side up for 5 min to toast the inside 11.
